Light pre-fermentation cold maceration followed by temperature-controlled fermentation on the skins, prioritising gentle extraction to preserve fruit expression and freshness. The wine is then racked and briefly aged before bottling.

The Variety

A grape variety with large, loosely packed bunches, thin skins and very late ripening, notable for its high natural acidity and light, fresh profile.

Did You Know…?

Moravia Agria is an indigenous grape variety of the Manchuela region that is at risk of extinction. Currently, only around 7 hectares are registered in Spain, and Finca El Molar is the only winery working with it as a single-varietal wine.
